Brewing Guide

Here are a few tips to guide you.

Burr Grinder

It’s all about the beans. Using a burr grinder makes for a better cup of coffee because it grinds the beans uniformly. It also gives you the flexibility to grind the coarseness or fineness that suits the kind of coffee maker you are using.

French Press

Ahhh…an experience for the five senses. Many people believe that a French Press makes the best coffee. Why? No paper filter means all of the flavour — everything in the cup.

Simple Steps for Brewing

  1. Before adding your grinds, preheat your press with some hot water. Swish it around a little until it’s warm to the touch.
  2. Boil enough water to fill your press.  Now is a good time to grind your beans (coarse).
  3. With the grinds at the bottom of the pot, pour twice the amount of water as grinds (to start). Gently stir the coffee (about 30sec).
  4. Pour the remaining water, place the lid gently on top of the grinds, let the coffee steep for 4 minutes. Use a timer.
  5. Slowly press the filter down. Hard to press? The grounds are too fine. Too easy? The grounds are too coarse.

Pour Over

An interactive coffee experience: fun to make, delicious to sip. The slower the water filters through the grounds, the more flavour is extracted.

Simple Steps for Brewing

  1. Boil your water. A gooseneck kettle is ideal, it helps you control the flow and allows you to be more precise with where you are pouring.
  2. Grind your coffee (medium coarse).
    Place the filter in the dripper, add the grounds, and gently tap to level.
  3. Start pouring in the centre of the grounds and pour in a steady spiral toward the outer edge and back to centre. In this first pour, as soon as the water hits the grounds, they rise up. This is coffee blooming. 
  4. In between pours, (typically 4 pours total), let the coffee drip for about 30 seconds.
  5. Repeat until complete.

Espresso

Rich, flavourful coffee, a regular part of our coffee ritual.

Simple Steps for Brewing

  1. Turn on your machine and get it ready by pulling a blank shot.
  2. Grind your beans (fine).  Texture is important here – too fine and your shot will taste bitter and burnt; too coarse and it will taste sour and look watery.  
  3. Once your grind is just right, dose your shot, tamp your grinds. 
  4. Insert your portafilter and press start.  If the grind, dose, and tamp are good, ideal brewing time is between 20-30 seconds; the shot will be dark, then golden brown, then topped with foamy mixture (aka. crema)
  5. Practice, repeat, enjoy!

Drip Coffee

If you’re looking for a standard cup of coffee that takes minimal time and effort, you can expect to enjoy a cup of drip coffee with a decent machine.  There are many on the market – find the one that’s best for you.  Consider a thermal pot so you can avoid ‘cooking’ your pot in between cups.

  1. Open the basket, and place your paper or reusable filter.
  2. Add grounds (medium).
  3. Add water.
  4. Press start.
